font-size: 14pt; color: #000000;\">When the water begins to boil, we add the snails and let them boil\u00a0<\/span><span style=\"font-family: 'times new roman', times, serif; font-size: 14pt; color: #000000;\">on a strong fire for about 20 minutes, scraping them constantly.\u00a0<\/span><span style=\"font-family: 'times new roman', times, serif; font-size: 14pt; color: #000000;\">Take them out of the saucepan, strain them and let their juice settle down.\u00a0<\/span><span style=\"font-family: 'times new roman', times, serif; font-size: 14pt; color: #000000;\">We take 1 cup of pure water from the surface and the rest of it is thrown away.\u00a0<\/span><span style=\"font-family: 'times new roman', times, serif; font-size: 14pt; color: #000000;\">Then we remove the snails from their shell, remove the intestine,\u00a0<\/span><span style=\"font-family: 'times new roman', times, serif; font-size: 14pt; color: #000000;\">rinse with plenty of water and a little vinegar, and let them drain well.\u00a0<\/span><span style=\"font-family: 'times new roman', times, serif; font-size: 14pt; color: #000000;\">Finally, we put the bodies of the snails back into the shells.<\/span><\/p>\n<p><span style=\"font-family: 'times new roman', times, serif;
